Zucchini Onion Parmesan Quiche
3/4c egg beaters
1/2c grated parmesan
1T parsley
1/2 T minced garlic
1/2t lawyer low sodium seasoned salt
2 c shredded squeezed zucchini
1/4c Bisquick Heartsmart
Spray pie pan with cooking spray.
Bake at 350 30-40 mins depending on oven.
I cannot stress enough, if you do not squeeze out the water from the zucchini it will be very moist and runny and won't set.
Makes 8 Slices at 1sp each...2 for 2sp.
